Lemon Curd Squares (from Rombauer & Becker, The Joy of Cooking 1975 edition, pp. 703-4)

Preheat oven 350o.

Sift together:
2 C. flour
C. finely chopped nuts
C. confectioner's sugar
Add and combine
1 C. melted butter
Press the mixture into an 8x8 greased baking pan and bake 20 minutes. Meanwhile, combine:
2 C. sugar
1 tsp. double-acting baking power
4 slightly beaten eggs
6 Tbsp. lemon juice
4 tsp. grated lemon peel
(1 C. flaked coconut if desired)

Pour these ingredients over the baked warm crust and bake 25 minutes. Chill. Before serving, cut into 2-inch squares and sprinkle with confectioner's sugar.

(Bake 10 min longer if you prefer a drier, chewier confection. The above will produce a moist, gooey one.)
