| Billie's Barbecue Brisket
*Reduce the amounts proportionately for a smaller amount.
10 lbs. brisket, chuck roast, chuck steak, or other beef cut.
Sprinkle each side with seasoned meat tenderizer, celery salt, pepper, and powdered garlic, penetrating surface 1/4" with a dinner fork at 1/4" intervals.
Place in a roasting pan and cover with 1 small bottle liquid smoke and ½ bottle Worcestershire sauce.
Cook at 325o for 5 hours, covered. Cool, refrigerate. Remove fat, cut into either slices or 2-3 in. squares, cover, and reheat. Serve with cheese grits.
Momma Mary's Barbecue Sauce
Mix:
1/4 C. vinegar
2 Tbsp. sugar
1 Tbsp. prepared mustard
1 tsp. ground black pepper
2 tsp. salt
½ tsp. cayenne pepper
1 slice lemon
1/4 C. butter
1 grated onion
Cook uncovered for 20 minutes. Then add:
2 Tbsp. Worcestershire sauce
½ C. catsup
1 ½ tsp. liquid smoke
(Or, mix all ingredients and heat in a microwave.)
Marinate chicken pieces, without skins, in sauce for at least ½ hour. Grill or bake. May also be used with burgers, fish, etc.
